Onion powder, made from dehydrated and ground onion bulbs, preserves the flavor of the fresh vegetable and herb without concerns over shelf-life. In fact, while the raw vegetable starts to decay after two or three weeks in the kitchen, where it can absorb moisture and odors from nearby foods, onion powder will last for two years if properly stored. Onion powder is three times more potent than dried onion, so for 1 cup of fresh onion, you would substitute only 1 tablespoon of onion powder.
