Mint Infused Honey

2-3 Tablespoons dried mint *(peppermint or spearmint)
¾ cup boiling water
½ cup 9 bottle or pouch) pectin
2 ½ cups strained Raw Honey
Green food coloring *(optional)
*Optional – This recipe can also be made using our Lemon & Vanilla Bean Infused Raw Honey, just Increase Mint Portion to 3-4 Tablespoons
Cover mint with boiling water. Let stand 15 mins. Strain. Add enough water to make ¾ cup. Add honey.
Heat to a boiling point. Add a few drops of food coloring to make a light green. Add pectin, stirring constantly. Bring to a full rolling boil. Remove from stove at once and skim off any foam.
Pour into sterile glasses or canning jars and seal.
Minted Green Beans in Honey Butter Sauce

36 oz fresh green beans, trimmed
2 tablespoons dried mint
½ stick salted butter
1 teaspoon honey
*Optional – This recipe can also be made using our Lemon & Vanilla Bean Infused Raw Honey, just Increase Mint Portion to 3-4 Tablespoons
Begin by blanching your beans in salted water for approximately 5-10 mins, so the beans are al dente’ and a bright green.
Remove from water and dry thoroughly
Place butter in sauté pan over medium heat and melt, adding the dried mint as soon as butter begins liquefying.
Once butter and mint are well mixed, add the honey and reduce heat to low.
Toss beans in honey butter sauce until well coated, and allow to sit over low heat until beans are thoroughly heated.
Serve hot portions with a bit of sauce drizzled over the top!
