A fragrant leaf from the Bay Laurel Tree this leaf is used as an herb. Bay leaves can be used fresh or dried but dried Bay Leaves seem to have a stronger flavor.
Generally use one to two Bay Leaves per dish. They can be used whole or crushed added straight into your dish or as part of a bouquet garni. Bay Leaves greatly improve flavor for those who are cutting down on salt. When you use the whole leaf be sure to remove before serving. Use these by adding to soups, stocks, pates, stuffing, stews and curries. You can add Bay when you are poaching or steaming fish or vegetables.
